Cottage pie, both tasty and filling. However, i feel its a little standard for the more astute student chef.
This is one of my favourites Beef Stroganoff. My portions serve 6-8 hungry men no problem. Ready in 30 mins.
- 1kg cheapish beef steaks cut into strips
- 500g long grain rice
- 2 tsp mixed crushed peppercorns
- 2 tsp olive oil
- 2 onions, finely sliced
- 300g mushrooms
- 2 cartons soured cream (600ml)
- 4tsp paprika
- Boil water for rice
- Cover beef in peppercorns
- Heat olive oil medium heat add onion 3-4 mins, then mushrooms 5mins.
- Throw on rice
- Hign heat + Add beef strips 5 mins, add 3tps water (white wine) to deglaze pan
- Stir in almost all soured cream and 2tsp paprika, heat on medium 5 mins. Seasoning?
- Place rice on plates, spoon over beef stroganoff, top little soured cream, season with paprika and black pepper.
And Robert is your mothers brother.
Now, now Brogie. Beef Stroganoff is ok, but for the more sophisticated student pallet here's something nicer, cheaper, and is ready in less time.
Smoked Bacon Carbonara, ready in 15-20 mins, serves 6 men comfortably.
-2 packets of smoked streaky bacon
-1 large packet of spaghetti
-1 onion, finely chopped
-1 red pepper, finely chopped
-100g mushrooms, roughly chopped
-2 eggs, and 2 separate egg yolks
-cheese
-Add spaghetti to boling water and boil for 10 mins
-Heat pan, no oil, fry bacon until fat goes crispy golden brown- 5 mins
-fry onions, peppers and mushrooms in same pan, after bacon is removed.
-Beat the whole eggs and extra yokes in a bowl, add cream and season with salt, pepper and oregano.
-Slice the bacon into strips, and add to the drained pasta with the onions, peppers and mushrooms
-Pour the beaten egg mixture over the pasta and bacon etc... then mix
-Serve with a good helping of cheese.
-Oh Indeed.
Homemade Pizza
Get a plain pizza base and a tin of chopped tomatoes. Spread tomatoes over the base and grate cheese over it. You can add some oregano if you want to be fancy.
If you want a vegetable only pizza chop up anything that comes to mind and pile on top. I urually use tomatoes, mushrooms, peppers and onions. Pile it high and cover with lots of grated cheese that will melt to keep it together.
If you want to add meat cook it separately then chop up and put on top.
You can add any herbs you want at this stage - some garlic can be good.
Bung it all in the over for about 20 minutes then dig in. Healthy and yummy. But you will need a knife and fork to eat cos it will be piled so high.
No idea about cost but fairly cheap.
Homemade Chicken Fajitas
I usually serve this for about 3 to 4 people which is always ready before the Simpson’s start about 30mins.
Ingredients
• 4 Long strips of Fillet Chicken (just one packet)
• 1 red pepper
• 1 green pepper
• 1 onion
• A stir in sauce of your choice e.g. (chicken tonight sauce)
• 2 tablespoons of Cajun pepper
• 1 tablespoon of Paprika
Instructions
Heat a Frying span with Olive Oil for about 5mins while that is happening starting cutting your chicken into smaller bits then put onto the pan fry in pan for about 10mins on a reduced heat.
Once that is happening start preparing the peppers and onions while checking back to the chicken regularly. Once your peppers and onions are chopped season the chicken with the spices above. (Cajun and Paprika)
Throw in your peppers and onions ( and Mushrooms if you prefer) and cook for another 5mins. Once that is done pore in your sauce and mix and let it simmer for about 15mins then its ready to serve.
